Time at Baccō is a slow rhythm, gently flowing like the seasons. Just as the life cycle of the vine cannot be rushed, creating any rare work of art requires patience. We believe that true wellbeing lies in synergy with nature, nurturing our environment and savouring its gifts. Our wines are made with this mindful, unhurried approach, to be generous and engage all the senses. Baccō is a family inspired project borne from Nathan Jankelowitz’s passion for the art of producing premium quality wines. Long inspired by the opulence of the Super Tuscan region, Nathan dreamt of bringing this holistic, experiential brand of luxury to South African wine lovers. A dream that has now become a magnificent reality.

Our finest blocks of grapes are designated for this blend and managed by an expert team of precision viticulturists. Our Merlot and Cabernet Sauvignon blocks consist of sandy topsoil with red clay subsoils interspersed with quartz and ferricrete deposits. As a result we get great concentration and complexity in the fruit. During the ripening season, green harvesting is performed to ensure a balanced, optimally ripe crop is harvested.

The 2021 vintage spent 20 months in French oak barrels. 95% of these are new oak, giving the wine magnificent structure, with only the more fruit-driven Malbec fraction of the wine matured in older neutral oak barrels. Once blended the wine was matured for a further 18 months before release.

Quality sorting at the cellar is a rigorous process: first, whole-bunch sorting, followed by destemming and finally berry sorting to ensure that no unripe or spoilt fruit is vinified. The grapes are gently crushed and then allowed to cold soak in the stainless steel tanks for approximately five days to extract colour and flavour before undergoing alcoholic fermentation. Once alcoholic fermentation is complete, the wine is drained and the remaining solids are pressed – these fractions are then racked separately into French oak barrels.
