The story began with Athanase de Villermont the youngest son of a noble family with a brilliant destiny. A great soldier who shone during the American War of Independence he inherited an extensive estate from his family in the Aÿ area. He immediately foresaw the extraordinary potential of the wines of Champagne but as an aristocrat he was forbidden to become involved in trade. He then met Joseph Bollinger a widely travelled German who had left his country of birth to learn about the Champagne wine trade and Paul Renaudin a local man who was fascinated by the world of wine. The firm of Renaudin-Bollinger & Cie was founded on 6th February 1829. Joseph took care of sales and Paul of the cellar. Athanase had founded a champagne House that was to endure through the centuries.

The grapes for Bollinger Rosé come primarily from Bollinger's own vineyards, which consist of over 85% Grand and Premier Crus. The red wine component, which lends the champagne its assertive aromatic power, comes from the Poirier Saint-Pierre, Montboeuf plots in Verzenay, and vines worked similarly to the legendary Côte aux Enfants plot.

Bollinger Rosé undergoes a maturation period on the lees, contributing to its rich texture and complexity. The exact aging period can vary, but it typically aligns with Bollinger's standards for producing high-quality, expressive champagnes.

Bollinger Rosé is crafted by blending 62% Pinot Noir, 24% Chardonnay, and 14% Meunier. The red wine, which constitutes 5-6% of the blend, is crucial for its style and complexity. The wine undergoes fermentation in stainless steel tanks to maintain its fresh fruit character, followed by aging on the lees for a period that enhances its complexity and texture.
