Zinfandel Mastro Zin

Masseria Tagaro is a structure with cutting-edge technologies, the same technologies that help to preserve quality while respecting the tradition of over three generations of winemakers.

The vineyards are situated at 450 metres above sea level, on mixed grounds of clay/red soil. The vines are trained with an espalier system with dry pruning as for bush vines. The vines are on average 30 years old. The yield is of approximately 4tons/ha.

Tagaro Zinfandel Mastro Zin is decanted into medium-toasting French oak where the malolactic fermentation takes place. It is left to mature in oak for 6 months and then allowed to rest and refine in the bottle for 4 months prior to its release.

The grapes are destemmed and then left to cold-macerate at 4/5°C for 36 hours. The alcoholic fermentation follows at controlled temperature. 6 days after the completion of fermentation the wine is then racked and the pomace pressed.
