On the palate

The crops of three different varietal blocks were harvested together, crushed in a mixed batch and fermented as one to produce a unique wine. Ripe and neatly balanced, this seamless blend gives the impressions of dark cherry, red and black berries. The boldness of the fruit stands out. Even in youth this wine is alluring and will richly reward cellar aging.

This empowerment project has a long-term aim, bringing vineyard ownership to residents of Cape Town’s Townships through school-owned premium vineyards. In the shorter term, selected rows of vines in blocks close to the Ocean (and the townships) provide the fruit for current ranges. The proceeds of this wine will support the entrance to tertiary education for a needy child, one who would otherwise be denied.

The bunches and loose berries were table sorted, with damaged grapes and loose leaves discarded. After a gentle crush, the mash was chilled overnight. It was then allowed to recover to room temperature before fermentation started. Open tanks were used with two hourly punch-downs, until most of the grape sugar had been converted. The mash was then pressed with the last steps of fermentation taking place in barrel, where the wine remained for 24 months. 100% barrel matured (30% new)
