Elgin Sauvignon Blanc

Waterford Estate’s Elgin Sauvignon blanc, with its vibrant citrus notes and refreshing minerality, is a versatile partner for a variety of dishes. Its bright acidity complements seafood like grilled prawns and oysters, while the herbal undertones make it an excellent match for salads with goat cheese or asparagus-based dishes. Waterford Estate is situated in the Blaauwklippen Valley on the rolling slopes of the Helderberg Mountain in the well-known Stellenbosch region. Waterford Estate prides themselves in making Fine Wine from carefully selected grapes. Winemaker, Mark Le Roux and viticulturist, David van Schalkwyk both believe a Fine Wine displays the character of its cultivar and a true sense of place. A Fine Wine should reflect the length on the palate, has a complexity of flavours, internal harmony between aromatics and the palate, and balance between its essential components.

Sourced from a single producer in Elgin, 6 different blocks of Sauvignon blanc are used to create a various number of batches of wine to select from for the blend.

100% Stainless steel vessels, aged for 6 months on the gross lees before racking

Bunches are hand-harvested. In the cellar, the bunches undergo destemming and are pressed into a settling tank overnight. The clear juice is then racked off the following day into the fermentation tank, where it undergoes cold fermentation for approximately 26 days. After fermentation, the Elgin blend is created and blended with the first racking.
