Varieties were destemmed, berry sorted and fermented separately in 1-ton bins and stainless steel open top fermenters. We used 5 days of cold maceration prior to fermentation to absorb long chain tannin complexes and stable colour from skins. To achieve this, we gave the cap 2-3 manual punch downs / pump overs per day during cold soak. Once fermentation began we continued with 3 manual punch downs a day and the wine was on the skins for 14 days in total prior to pressing off. Malolactic fermentation took place 100% in barrel, and Individual components were racked and returned to the same barrels after completion of malolactic fermentation. Maturation took place in the same barrels – 16% new wood and 84% 2nd fill. 21 months in barrel altogether. Individual barrels were tasted over the course of maturation and the final wine was blended in June 2021.Un-fined, no sterile filtration and bottled on the 24th of August 2021
