Il Currubo

Il Carrubo is a wonderful, gastronomic wine that, with its inherent wildness, fits like a glove with precisely game - e.g. venison tenderloin with venison sauce and hasselbach potatoes - or for paprika-marinated pork chops on the grill.

Montecarrubo is a boutique winery located on the remains of an ancient volcanic crater in Sicily, Italy. The estate was founded in 2005 by Peter Vinding-Diers, a renowned Danish winemaker, and his wife Susie. Montecarrubo focuses on crafting high-quality wines that reflect the unique terroir of the region. The vineyards benefit from constant sea breezes and volcanic soil, which contribute to the distinct character of the wines. Montecarrubo produces a variety of wines, including blends of Syrah, Cabernet Franc, and Merlot. The wines are known for their vibrant flavours and elegant profiles. The winery uses traditional methods such as hand harvesting and fermentation in cement vats, followed by aging in old Pomerol barrels. Some of their notable wines include "Il Carrubo" and "Vignolo," which have received high praise for their complexity and richness​.

Carrubo means the Carob tree ( Creatonia Siliqua ) and the fruits are known as St John's Bread. We have many of this typical Mediterranean tree, and give the fruits to our workers. The long fruits are milled to produce a flour which can be baked into a bread people with gluten problems can happily eat. ll Carrubo is made from 31% specially selected Syrah vines and in addition 44% Merlot and 25 Cabernet Franc, which sends it up a level in intensity and body compared to its little brother wine 'Il Piccolo', which is produced on the same chalky fields approx. 70 km from Vinding's winery.

The grapes are biodynamically grown and manually harvested - and fermented in the winery on the grapes' wild yeast in open fermentation tanks, followed by 9 months of aging in lightly used oak barrels from Pomerol in Bordeaux. Along the way, the wine is decanted several times to get rid of the sediment. Apart from that, it is quite unfiltered when it hits the bottles, and precisely from there arises some of the personality-filled wildness that is Vinding's signature.
