Mooiplaas Wine Estate and Private Nature Reserve is situated in the Westward reaches of the Stellenbosch Winelands, approximately 40km east of Cape Town. We are a traditional working wine farm with history stretching back more than two centuries. The Roos Family has been the custodians of this land for three generations. Our vineyards lie on the steep slopes of the ancient mineral-rich soils of the Bottelary Hills, where we produce a range of environmentally friendly wines rooted in tradition and artisan techniques.

The Watershed takes pride of place as the highest vineyards on Mooiplaas, with a panoramic view of the Cape Peninsula and Table Mountain. At an altitude of 370m above sea level, cool southerly winds from the nearby Atlantic Ocean create ideal ripening conditions for grapes of exceptional quality.

Specially selected 225L and 300L barrels. Wine was aged for 9 months. French oak barrels, 3rd and 4rd fill.

Grapes were de-stemmed but weren’t crushed (whole berries). Cold soaking took place for 48 hours. Fermentation took place for 7 days on the skins in open bin liners at 24 – 28°C. Punched down 5 times a day and pressed with a pneumatic press. Spontaneous malolactic fermentation occurred
