Wonderfontein Wine Estate is located just outside the vibrant country town of Robertson on the famous Route 62. Wine farming and winemaking at Wonderfontein Wine Estate is an age-old tradition, dating back to 1884 and is home to the proud Marais legacy. Wine lovers are invited to savour five generations of progressive winemaking where proprietor Paul Marais,winemaker Stefan Bruwer and their committed teams today produce elegant, hand-crafted table wines, delectable Campanile brandy and complex fortified wines using modern winemaking equipment but with an old-world approach. Beautifully manicured vineyards are a feast for the eye and our vineyard practices are with a focus on environmentally-friendly viticulture. Chardonnay grapes were handpicked in the early morning from our riche limestone soil vineyards.

Secondary fermentation occurred in the bottle and the wine spent a minimum of 44 months on the lees after which it was manually riddled and degorged.

Crate by crate the whole bunches were passed into the press with a very low recovery rate of only 420 litres per ton. Fermentation took place in a stainless steel tank at 14 degrees Celsius.
