A group of friends created Thistle and Weed in 2015 as an opportunity to express their creativity get their hands dirty and craft small batch wines from the distant nooks and crannies of the Western Cape South Africa.

We’ve sourced our Tempranillo from shale soil found along the Berg River in Wellington. The Alicante Bouschet grapes and small parcels of Touriga Naçional, Pontac, Souzão and Touriga Franca are from the foothills of Stellenbosch mountain. Deep red, welldrained soils of shale and sandstone buffer these vines from extreme conditions.

After gentle pressing the wine is matured in 2nd and 3rd fill French oak for 8 months prior to blending and bottling.

The components of this wine are vinified seperately. All are fermented naturally in open top fermentors, with some whole bunch fermentation.
