Our chardonnay comes from the Franschhoek valley, on estate grown fruit. Franschhoek offering fast draining alluvial sandstone soils, and some granite on the mountain sides. Creating elegant and structured whites. Our clay base, retaining water at depth and giving the vines water supply. We mostly try to dry farm this site to give the intensity of fruit we desire.

The wines then spend 14-18 months in barrel before blending takes place.

From the vineyard to the cellar the grapes go through various selection processes to ensure we get only the best fruit. Hand harvested into small lug boxes and transported to the cellar. The grapes are whole bunch pressed. The juice was left to settle for two days and racked to barrel. Using 100% wild yeast, fermentation occurred over an 9-10 day period. The wine goes into 100% new french oak barrels, where 50% undergo full malolactic fermentation adding comlexity.
