Chapters Stellenbosch Chenin Blanc

This wine is a perfect accompaniment to grilled fish, and chicken dishes.

Miles Mossop Wines burst onto the scene in 2004 when the first wines were made: Max 2004 and Saskia 2004. Max is a blend of Cabernet Sauvignon Merlot Petit Verdot and more recently Malbec and Saskia a blend of Chenin blanc Viognier and more recently Clairette blanche. Later in 2009 a third wine was introduced the Kika 2009 a botrytised wine made in the Noble Late Harvest style from 100% Chenin blanc.

This is a 100% Chenin blanc from a certified old vines bush vine vineyard planted in 1982 in the Bottelary ward of Stellenbosch, growing on decomposed shale soils.

The fermentation is allowed to start naturally and once completed the wine is topped and matured sur-lie for 11 months with regular lees stirring. The wine undergoes partial malolactic fermentation.

The grapes were hand harvested into small crates and placed in a cold store overnight. The following day the grapes were bunch sorted and whole bunch pressed into tank for overnight settling without the addition of Sulphur dioxide before being taken to 400L old French oak barrels for fermentation.
