Villiera Wines is also home to the Villiera Wildlife Sanctuary (220 Ha) Visitors are guaranteed fantastic sightings of a diverse population of antelope, for example Gemsbok, Burchell’s Zebra, Kudu, Eland, Springbok, Bontebok, Giraffe, Wildebeest etc. as well as other small mammals and a huge diversity of birdlife attracted by the 12 dams and marsh areas. On a clear day one has a beautiful panoramic view of the mountains overlooking the Cape Peninsula.

Fully ripe grapes were handpicked from an old bush vine block. The philosophy for this wine was minimal intervention throughout the whole winemaking process and making a vintage and site-specific wine.

The wine was matured in a combination of Amphora (50%) and Barrel (50%) for 10 months. The barrel portion adds structure and complexity. The Amphora portion helps build the texture and flavour. At bottling the wine went through a rough filter.

This wine went through spontaneous fermentation and MLF. The Gamay Noir was fermented in an open top tank with 30% whole bunch split between the top and bottom for different flavour profiles. We look for structure and tannin grip from the stalks (this also helps with freshening up the wine). It spent 10 days post fermentation on the skins for better tannin integration.
