Villiera Wines is also home to the Villiera Wildlife Sanctuary (220 Ha) Visitors are guaranteed fantastic sightings of a diverse population of antelope, for example Gemsbok, Burchell’s Zebra, Kudu, Eland, Springbok, Bontebok, Giraffe, Wildebeest etc. as well as other small mammals and a huge diversity of birdlife attracted by the 12 dams and marsh areas. On a clear day one has a beautiful panoramic view of the mountains overlooking the Cape Peninsula.

2016 was a relatively cool year with perfect ripening conditions. Only healthy grapes were picked by hand and delivered to the cellar in whole bunch form.

After blending with Pinot Noir, yeast and sugar were added for a secondary fermentation in the bottle, followed by extended lees contact of 5 ½ years.

Whole bunches were carefully deposited into pneumatic bag presses and gently pressed using a champagne pressing cycle. Only the cuvee (best quality juice) was used in the blend. Part of the Chardonnay (half) was fermented in used oak barrels for extra complexity.
