18 months in older oak barrels.

Hand-picked and destemmed, but not crushed. Picked relatively early, with good acidity and bright fruit flavours. Cold soaked for 3 days before ferment. Fermented quite cold (18- 23°C) and gentle pump-overs. Initially 3 x per day, then 2 x day and no pump overs after 5B. One tank pressed off at 0B and another left for 5 days after ferment.
