Between two mighty oceans on the southern tip of Africa lies the historic Saxenburg Wine Farm. Here memory and the seasons conspire with the cellarmaster’s craft to produce unique wines of consistent and exceptional quality. Sourced from selected, west- and south-west facing vineyards on Saxenburg, all planted on decomposed granite. Strict pruning, suckering and canopy management ensure a balanced yield and even ripening.

The components were aged separately in French oak barrels (20% new) for 12 months before a rigorous barrel selection and blending process.

Various parcels were picked and fermented separately. Some parcels were left to ferment as whole bunches, some with a small number of stems added back, and some destemmed fully, but no crushing was done on any component. In total 15% of the final blend was from whole bunch fermentation. Extraction protocols were based on daily tastings and therefore differed for each component, but varied between 3 pump-overs a day and 1 pump-over once every 2nd day.
